Sweet Potato Soup In Mango Aroma

Ingredients
- 6 medium sized peeled sweet potatoes
- 1 large ripe mango peeled and cut into cubes
- 1 stem of fresh thyme
- 1 liter of vegetable stock
- 400 gr. of potatoes peeled and cut into cubes
- 1 anis star
- 150 ml. of cream (milk-based or parev)
- Salt and pepper for seasoning
Preparation
- Coarsely chop sweet potatoes. Place a pot and add the vegetable stock, cubes of mango, fresh thyme, the anis star and cook until soft. Take out the anis star and blend the rest of the ingredients to a thick liquid. If the outcome is too thick, add some more stock and cook for another 5 minutes. Add the cream and check if it requires seasoning. Pour into a soup plate and decorate with chestnut shavings, chopped chives and sesame oil. You may add mango as desired.
