Purim Hamantaschen
Ingredients (note: 100 grams=3.5 oz.)
20 gr. fresh yeast or flat spoon of dry yeast
1/3 glass of lukewarm milk
1/2 cup of sugar
500 gr. Flour ( 4 small cups )
A pinch of salt
300 gr. Margarine or butter
2 egg yolks
1/2 a jar of sour cream
1 egg yolk for smearing on top
Ingredients for the filling
(180 ml) 3/4 cup of milk
1 cup of sugar (200 gr)
3 spoons of honey (60 gr.)
200 gr. ground poppy seed (2 cups)
100 gr. ground almonds (1 cup)
Lemon zest from half a lemon
1/3 cup of raisins (50 gr.)
Preparation
The filling
üBoil the milk, butter, sugar, and honey and add the poppy seed and then mix
üChill the mixture and add the almonds, raisins and lemon zest
üPlace the mixture in the fridge to cool off until you need to use it
The Dough
üMix the yeast with the milk and a tea spoon of sugar and let baste for 10 minutes…
üAdd the flour, the salt and the remainder of the sugar.
üNow, add the rest of the ingredients. Knead until a supple soft dough is achieved…
roll the dough until it is no thicker than 1/2 cm, cut circles of 6-8 cm.
üPlace a tablespoon of the filling in the middle of the circle and fold it into a triangle,
brush egg on top and bake in a 180 degrees preheated oven for approximately 20
minutes.
